About Us

Preparing new and exciting cuisine, alongside traditional fare, is the goal of Daniel Darves-Bornoz owner/executive chef of Unique Catering & Milano, Newton Plaza, Latham, Milano North in Lake Placid Village and Provence, in Stuyvesant Plaza Albany.

Daniel began his journey in the culinary field upon graduating from the Culinary Institute of America in 1978.  He continued his training in Paris, France and Brittony in the U.K. where he refined his skills under master chefs for three years. Upon returning to the states, Daniel continued to perfect his talents in New York City and San Francisco working with Christian DeLouvier, Alain Senderens and Alain Chapel.

Ultimately settling in Albany, New York, Daniel opened Unique Catering in 1986. He quickly became one of the premier caterers in the Capital District. In 1991, Milano Restaurant was opened, specializing in Northern Italian cuisine and featuring such menu items as wood-fired oven pizza, homemade pasta, and specialty-grilled items. In the fall of 1999, Provence Restaurant was opened. French and Mediterranean cuisine served with both traditional and contemporary touches. The opening of Provence allowed both restaurants to expand their wine program. Each wine list now boasts over 150 selections and each have been awarded the Wine Spectator Award of Excellence. Most recently, in September of 2006, Daniel opened Milano North in the heart of Lake Placid village. Overlooking charming Main Street, it features the same popular Northern Italian dishes of Milano in a cozy, Adirondack setting.

Daniel's passion for food and wine and his expertise as a restaurateur assure that he will continue to be at the forefront of the Capital District's restaurant and catering landscape.
